A good diet doesn’t happen by accident, but it doesn’t have to be time-consuming or boring to eat well. Our philosophy is ‘minimally processed’ and getting back to basics: quality protein foods, good fats, appropriate and unprocessed carbohydrates, and an abundance of vegetables and fruits. Try this sweet omelet that is delicious and satisfying.
Ingredients:
- ½ apple, grated
- Two eggs
- 10g desiccated coconut
- ½ tsp unsweetened vanilla extract
- 1/4 cup raspberries (or berries of your choice)
- 170g Nonfat Greek yogurt
- Spray oil
Preparation:
- Grate the apple.
- Whizz the eggs, coconut, apple, and vanilla together for 15-20 seconds using a small food processor or mix by hand (whisking eggs first).
- Heat a pan on medium heat with spray oil, and when melted, add the mixture. Cook until bubbling on the bottom and flip to cook for three minutes +-. Serve with additional berries and Greek yogurt.
