Avocado Egg Salad

This Avocado Egg Salad is creamy, zesty, and sprinkled with Everything Bagel seasoning—a feel-good meal/snack you’ll crave on repeat. It not only comes together quickly and easy there are other benefits:

Ingredients:

  •  4 pasture-raised boiled eggs, chopped
  • 1 ripe organic avocado
  • 0.5 red onion, finely chopped
  • 2 celery sticks, finely chopped
  • 4 red cabbage leaves
  • 75g Nonfast Greek Yogurt
  • 1 tablespoon Dijon or stone-ground mustard
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon Everything Bagel seasoning

Instructions:

  1. In a medium bowl, mash the avocado until smooth.
  2. Fold in the chopped boiled eggs, red onion, celery, stir in the Dijon mustard, lemon juice, yogurt, everything bagel seasoning, salt, and black pepper. Mix until well combined. Sprinkle with additional Everything Bagel seasoning (optional).
  3. Serve with crackers, in lettuce wraps/cabbage (as in the nutrition label), or on toast. Enjoy!
