A sweet omelette that is delicious and satisfying

Apple Omelet

A good diet doesn’t happen by accident, but it doesn’t have to be time-consuming or boring to eat well. Our philosophy is ‘minimally processed’ and getting back to basics: quality protein foods, good fats, appropriate and unprocessed carbohydrates, and an abundance of vegetables and fruits. Try this sweet omelet that is delicious and satisfying.

Ingredients:

  • ½ apple, grated
  • Two eggs
  • 10g  desiccated coconut
  • ½ tsp unsweetened vanilla extract
  • 1/4 cup raspberries (or berries of your choice)
  • 170g Nonfat Greek yogurt
  • Spray oil

Preparation:

  1. Grate the apple.
  2. Whizz the eggs, coconut, apple, and vanilla together for 15-20 seconds using a small food processor or mix by hand (whisking eggs first).
  3. Heat a pan on medium heat with spray oil, and when melted, add the mixture. Cook until bubbling on the bottom and flip to cook for three minutes +-. Serve with additional berries and Greek yogurt.
